Charlotte Mithril has been working with the New Nordic Kitchen since 2006 first as a sensory scientist and product developer in the private sector and since as one of the key-persons in the development of the New Nordic Diet in her PhD study as part of the OPUS project in work package 1. She has a solid scientific and practical background within nutrition, sensory science, gastronomy and health, with the focal point of her work being the New Nordic Kitchen.

Charlotte Mithril’s main areas of interest are a holistic, multidisciplinary approach to health
